Quick and Easy Cottage Cheese Pancakes Recipe

Cottage cheese pancakes have been making rounds in the keto community for a while now. But they usually use flour alternatives instead of wheat flour. This version allows you to enjoy your favorite pancakes still but with a higher protein nutritional value. You also get to benefit from all the other nutrients from cottage cheese.

Quick and Easy Cottage Cheese Pancakes Recipe

Unlike traditional pancakes, this pancake batter does not use milk or butter, as cottage cheese has fat already. Additionally, since cottage cheese is thick, you use less flour to avoid having a batter that is too thick.

  • 1 Whisk
  • 2 Mixing Bowl
  • 1 Spatula
  • 1 Ladle

Ingredients
  

  • 1 Cup Cottage Cheese
  • 1/3 Cup All-purpose wheat flour
  • 3 Large Eggs
  • 1 Teaspn Vanilla extract
  • Cooking spray or vegetable oil
  • Cinnamon Optional

Instructions
 

  • Sieve the flour and add the cinnamon to the flour at this point.

  • Beat the eggs and cottage cheese together lightly.
    3 Large Eggs, 1 Cup Cottage Cheese
  • Then add the flour to the mixture and whisk together until all the flour is incorporated.
  • Make the pancake batter with a hand blender/mixer, blender, or food processor. Add the vanilla extract at this stage

  • Let the mixture sit for at least 30 minutes to combine properly. This helps the flour absorb moisture and results in fluffier pancakes.
  • Pour reasonable portions of the mixture into an oiled, heated pan to cook the pancakes. Use the ladle for even pancakes.
    Cooking spray or vegetable oil
  • Cook the pancakes for 2-3 minutes on each side or until golden brown.
  • Once cooked, transfer onto a plate and repeat until the pancake batter is finished.
  • Then serve the pancakes with your favorite toppings and syrup and enjoy.

Notes

  • Use milk or water if you prefer to have a thinner batter.
  • Store any leftovers in the refrigerator for up to 4 days. 
  • You can use oat flour instead of all-purpose flour. 
  • You can add cocoa powder to chocolate cottage cheese pancakes.
  • Use other extracts in the batter to create a unique flavor.
