Kale is a highly nutritious and easy to grow leafy green that will probably be among the first vegetables you grow in your garden. It packs a wide range of vitamins and minerals, little fat and low calories. This makes it a perfect salad vegetable or a good complement to other dishes when steamed gently.
When eaten in a salad, you’ll get the full does of vitamins A, K, C and B6, a good dose of antioxidants and minerals like copper, potassium, magnesium and calcium.
Ingredients
- 2 bunches of organic kale
- ½ silvered almonds
- ½ cup organic currants, cranberries or raisins
- ¼ cup thin sliced red onions
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 juiced lemon
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon mustard
Instructions
- In a bowl, whisk together all the salad dressing ingredients (juiced lemon, 2 tablespoons olive oil, honey and mustard). Set them aside
- Pick your clean kale, remove the stem, dice them and place them into a big bowl
- Add the olive oil into the kale then sprinkle some salt and pepper onto the kale. Mix it up with your hands
- Add all the remaining salad ingredients into the bow and toss them to mix well
- Add the salad dressing over your salad and toss some more
- Enjoy the salad immediately or save it in a fridge for up to two days
