Must Try Simple Garden Kale Salad

This simple garden kale salad recipe is designed to let you enjoy your garden produce while pumping you full of the nutrients you need to keep fit and healthy. It can’t be a standalone meal as it doesn’t have enough calories hence you should eat it as a snack or in conjunction with something else.

Kale is a highly nutritious and easy to grow leafy green that will probably be among the first vegetables you grow in your garden. It packs a wide range of vitamins and minerals, little fat and low calories. This makes it a perfect salad vegetable or a good complement to other dishes when steamed gently.

When eaten in a salad, you’ll get the full does of vitamins A, K, C and B6, a good dose of antioxidants and minerals like copper, potassium, magnesium and calcium.


  • 2 bunches of organic kale
  • ½ silvered almonds
  • ½ cup organic currants, cranberries or raisins
  • ¼ cup thin sliced red onions
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 juiced lemon
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon mustard


  1. In a bowl, whisk together all the salad dressing ingredients (juiced lemon, 2 tablespoons olive oil, honey and mustard). Set them aside
  2. Pick your clean kale, remove the stem, dice them and place them into a big bowl
  3. Add the olive oil into the kale then sprinkle some salt and pepper onto the kale. Mix it up with your hands
  4. Add all the remaining salad ingredients into the bow and toss them to mix well
  5. Add the salad dressing over your salad and toss some more
  6. Enjoy the salad immediately or save it in a fridge for up to two days
